With winter upon us, we recently updated our dessert menu to include a few new seasonal treats. Brennah Habermann, our Executive Pastry Chef, shared with us some insight on her process for the transition and brainstorming new desserts.
When asked about her process for switching menu items, Chef shared that she chooses menu items inspired by her own personal cravings during that season. This winter, you will find a brand new peppermint dessert on our menu, which of course is also a flavor many associate with the holiday season. Chef Brennah elaborated that she and her team are avid coffee drinkers and with this busy time of the year, were inspired by one of their favorite coffee treats, the Starbucks Peppermint Mocha beverage exclusively available during the holiday season. She started craving one of those tasty red cup treats and that was the inspiration for this chocolatey winter delight.
The Chocolate Peppermint Cake is gluten free and completely flourless! The cake is made with eggs, cocoa powder, sugar, and butter. The mousse consists of white chocolate, milk, heavy cream, gelatin, eggs, and peppermint. The decadent cake consists of three layers of cake with two layers of mousse and a glaze with 63% ganache. The cake is garnished with a baked Swiss meringue, crushed peppermint and mocha ice cream. YUM!!
