An Evening at Audrey Claire’s COOK with Chef Seth Petitt and John Trogner

Partnering with local breweries has been quite a theme at Urban Farmer Philadelphia this summer. From pairing brews with our mouthwatering barbeque for our weekly Beer-B-Q, to hosting an intimate behind the scenes dinner where we paired a local brewery and their signature beers with our finest plates, has made this summer one unique and local experience.

On July 17th, Chef Seth and Chef Sonny took 16 guests behind the scenes of a four-course dinner paired with Tröegs Brewing Company beer at Audrey Claire’s COOK. The menu included charcuterie with house-made pickles, tarragon mustard and sea salt crackers paired with LaGrave; dry-aged beef tartare with parmesan relish, pickled onions and cured egg paired with Mortal Cherry; tomato panzanella with heirloom tomato, fermented cucumber, and ricotta paired with DreamWeaver; confit aged striploin with marrow dijon custard, brown butter carrots and black garlic bordelaise paired with Perpetual IPA; and for dessert, blackberry cobbler with cultured vanilla ice cream, raw honey, and bee pollen paired with Blackberry Tizzy.

It’s always a pleasurable experience when you’re able to share the love of a craft with a passionate company like Tröegs. Like Urban Farmer, John Trogner, Tröegs Independent Brewing’s co-founder and brew master, loves creating connections between taste, experience, and memories. John shared his philosophies on complementing and contrasting single ingredients and how beer can amplify the goodness of food and how food can amplify the goodness of beer.

The ability to pair our unique and farm fresh menu with local companies is just an ounce of what makes our craft so amazing. Having the opportunity to showcase what we do with local companies… now that’s rewarding.
